Choosing between pot and reflux
A pot still carries flavour through from the wash, which is what you want for whisky, rum and brandy. A reflux still strips flavour out to give you a clean neutral at up to 93% ABV — the base for vodka, gin and anything made with an essence. The Air Still Pro and Pure Distilling systems switch between both modes; the T500 changes behaviour depending on which condenser top you fit. Air-cooled or water-cooled
Air Stills need no plumbing, which makes them workable in an apartment, a caravan or anywhere on water restrictions. The T500 and 25L Pure Distilling systems are water-cooled and use roughly 600–750L per run, so they want a laundry, shed or garage with a tap.
What else you’ll need
A still on its own won’t make spirit. Every run starts with a wash — sugar or grain fermented with turbo yeast and nutrient, then carbon filtered before distilling. You’ll find those in Yeast & Production Packs. Once you’ve got a clean neutral, Spirit Essences turn it into whisky, gin, rum or bourbon.

Manufacturing spirits in Australia — including for personal use — requires an excise manufacturer licence from the Australian Taxation Office. Rules vary with the type and capacity of equipment, and penalties apply for unlicensed distillation. This page is general information, not legal advice.
