Most home distilling kits include the still itself, along with fermentation supplies to prepare your wash before distilling. Higher-end kits, like our reflux systems, may also include additional components for extra purification. Check each product’s description for the exact contents.
Yes — you can own a still of 5 litres capacity or less without needing ATO permission, provided you’re not using it to distil alcohol (for example, for distilling water or essential oils). Stills over 5 litres always require ATO permission to own, regardless of what you use them for.
However, the 5-litre threshold doesn’t apply to distilling alcohol itself. To legally distil spirits — with a still of any size, including a small home unit — you need an excise manufacturer licence from the ATO, and the ATO does not grant these licences for personal or hobby use; a genuine commercial purpose is required. Always check current ATO requirements before you begin, as this is an area where the rules genuinely matter and penalties can be significant.
Pot still mode and reflux mode produce genuinely different results, and understanding the difference helps you choose the right approach for what you’re making. Reflux mode recycles vapour up and down the column before it condenses, stripping out more of the heavier compounds along the way — the result is a much purer, cleaner neutral spirit, up to around 90% ABV, ideal as a base for vodka or for flavouring with essences. Pot still mode skips that extra refining step, giving you more character and flavour carried through from the wash, up to around 80% ABV — this is what you’ll use for whiskey, or for infusing real botanicals to make traditional gin.
Our Air Still Pro does both in one unit, with a simple mode switch and interchangeable distillation tips. A typical gin-making run uses both modes together: start with a reflux run to produce a clean, high-purity neutral spirit, then switch to pot still mode with the built-in botanical basket loaded with juniper, citrus peel, and other botanicals for a genuine vapour-infused gin — the same two-stage method serious distillers use to make traditional gin, not just a flavoured neutral spirit.
Fermentation time depends on your yeast and how much sugar you use. With a Classic 8 Turbo Yeast, for example, a 6kg sugar wash can ferment in as little as 2–3 days, while an 8kg sugar wash for higher alcohol content typically takes 5–10 days depending on temperature. Fermentation is complete once your hydrometer reading holds steady for two consecutive days. After that, distilling itself usually takes just a few hours.
A basic home distilling kit gets you distilling straight away, but many distillers also pick upfitted fermenters for making wash, spirit essences for flavouring, acarbon filter for smoothing the finished spirit, and bottles for storage — all available in our spirit making range.
