‘Honey Wheat’ Recipe Instructions

This recipe is another Matilda Bay favourite of Aussie Brewmakers – the Beez Neez clone which is a honey wheat beer. This recipe is another great introduction to experimenting with hops and grains for the beginner or ‘tin kit’ brewer.
Ingredients:
- 1 x 1.7kg Morgan’s Golden Sheaf Wheat Beer Kit
- 1 x 1.5kg Coopers Liquid Malt -Wheat
- 1 x 15g Premium Wheat Yeast
- 1 x 150g Cracked Wheat Grain (steeped)
- 1 x 12g Cluster Finishing Hops (steeped)
Other Ingredients:
- 500g Capillano Honey – available from any supermarket
- 200g of Dextrose if kegging with no secondary fermentation
Method:
- Clean / sterilize all equipment including fermenter, paddle, mug and jug (used for steeping)
- Discard Morgan’s Golden Sheaf Wheat Beer tin yeast and sit tin along with Honey jar and Coopers Liquid Wheat Malt tin in hot water for 10 minutes to loosen contents
- Boil 1.25L of water in kettle
- Steep 12g of Cluster Finishing Hops in 250ml of boiled water for 10 minutes
- Steep 150g of Cracked Wheat Grain in 1L of boiled water for 15 minutes
- Re-boil 2L water in kettle
- Add 1.5L of boiled water to fermenter with malt tin contents and stir vigorously to dissolve
- Pour 250ml boiled water into malt tin and stir to dissolve remaining contents, then add to fermenter
- Add beer kit tin to fermenter and stir vigorously to dissolve
- Pour 250 ml boiled water into beer tin and stir to dissolve remaining contents, then add to fermenter
- Re-boil 1L of water in kettle
- Strain steeped grain liquid into fermenter and rinse with c. 500ml boiled water (do not add grain to fermenter)
- Add 500g Capillano Honey to fermenter and rinse jar with some boiled water and add to fermenter
- Add Cluster Finishing Hops teabag and steeped water to fermenter
- Add cold water to fermenter to 22.5L and test temperature – make sure it is between 18-24 degrees before pitching yeast
- Take Hydrometer reading and then pitch 15g Premium Wheat Yeast and stir gently
- When fermentation finished check with hydrometer and bottle as per normal.
