This recipe is another Matilda Bay favourite of Aussie Brewmakers – the Beez Neez’ clone recipe kit which is a honey wheat beer (Beez Neez Beer or Beez Neez’ Beer).

This recipe is another great introduction to experimenting with hops and grains for the beginner or ‘tin kit’ brewer.

Supplied Kit Ingredients included in Beez Neez’ Clone Recipe Kit (Beez Neez’ Beer / Beez Neez Beer):

  • 1.7kg Morgan’s Premium Sheaf Wheat
  • 1.5kg Coopers Liquid Malt -Wheat
  • 15g Premium Wheat Yeast
  • 150g Cracked Wheat Grain
  •  12g Cluster Finishing Hops

Other Ingredients for Beez Neez’ Clone Recipe Kit (Beez Neez’ Beer / Beez Neez Beer):

  • 500g Capillano Honey – available from any supermarket
  • 200g of Dextrose if kegging with no secondary fermentation

Method to make Beez Neez’ Clone Recipe Kit (Beez Neez’ Beer / Beez Neez Beer):

  1. Clean / sterilize all equipment including wort, paddle, mug and jug (used for steeping)
  2. Discard Wheat Beer tin yeast and sit tin along with Honey jar and Coopers Liquid Wheat Malt in hot water for 10 minutes
  3. Boil 1.25ltrs of water in kettle
  4. Steep 12g of Cluster Finishing Hops in 250mls of boiling water for 10 minutes
  5. Steep 150g of Cracked Wheat Grain in 1ltr of boiling water for 15 minutes
  6. Re-boil 2ltrs water in kettle
  7. Add 1.5ltrs of boiled water to wort with Coopers Wheat Malt tin and stir to dissolve
  8. Pour remaining 500mls boiling water into Coopers Wheat Malt tin and stir, then add to wort
  9. Re-boil 1.5ltrs water in kettle
  10. Add Wheat beer tin to wort and stir to dissolve
  11. Pour 500mls boiled water into the Wheat Beer tin and stir, then add to wort
  12. Strain steeped wheat grain into wort and rinse with 500mls boiling (do not add grain to wort)
  13. Add 500g Capillano Honey to wort and rinse jar with remaining boiling water
  14. Add water to wort to 22.5 ltrs and test temperature – make sure it is between 18-24 degrees before pitching yeast
  15. Add Cluster Finishing Hops bag and mug of water to wort
  16. Take Hydrometer reading and pitch 15g Brew Cellar Premium Wheat Yeast and stir gently
  17. When fermentation finished check with hydrometer and bottle as per normal.

N.B. If kegging, add 200g of Dextrose at step 7
