HOW TO MAKE DIY GIN WITH THE AIR STILL PRO

STEP 1: PREPARE THE SUGAR WASH

a. Clean and Sanitize: Ensure your fermenter and mixing spoon are thoroughly cleaned and sanitized.

b. Mix Ingredients: Pour 7.5 L of lukewarm water (around 30°C) into the fermenter. Add 2.4 kg of turbo sugar or dextrose and stir until fully dissolved, creating approximately 9 L of sugar wash.

с. Add Yeast and Turbo Carbon: Following the instructions on the Air Still Fermentation Kit, add the yeast. Gently massage the Turbo Carbon sachet before adding it to the wash, then stir well.

d. Fermentation: Allow the mixture to ferment at room temperature (18-24°C) for about 7 days or until bubbling ceases.

e. Check Fermentation: On Day 7, use a hydrometer to ensure fermentation is complete. The Specific Gravity (SG) should be below 990 and stable for two consecutive days.

f. Clear the Wash: Once fermentation is confirmed, stir the wash vigorously to remove gases. Add Turbo Clear Part A and stir well, letting it stand for 1 hour. Then, gently stir in Turbo Clear Part B and let it settle for 24 hours.

g. Prepare for Distillation: Carefully transfer the clear wash, approximately 8 L, to be ready for distillation.

STEP 2: DISTILL IN REFLUX MODE

1. Pour or siphon 4 L of the settled wash into the clean Air Still Pro boiler, leaving behind any sediment.

2. Add Ceramic Boil Enhancers and 1 capful of Distilling Conditioner to the boiler.

3. Fit the reflux distillation tip labeled “R” by turning clockwise with a spanner to loosen and anticlockwise with fingers to tighten.

4. Ensure the foreshots collection vial is securely fitted and place an 800 ml collection jar under the distillation tip.

5. Press the mode selector button once to enter standby mode (white light), then press again to enter reflux mode (green light).

6. Collect 500 ml of distillate, then allow the unit to cool for at least 20 minutes.

7. Remove the head unit, empty the boiler, and dispose of the foreshots. Clean the Air Still Pro.

8. Measure the ABV of your spirit; it should be around 90% ABV. Dilute to 40% ABV by adding approximately 600 ml of water, using a calculator for precision.

9. Filter the diluted spirit through a carbon filter for a smoother finish.

While filtering, you can distill the remaining wash or store it in an airtight container for up to a week.
