French Saison yeast is an exceptional, highly attenuative top-fermenting ale yeast, creating distinctive beers with spicy, fruity and peppery notes. Ideal for fermentation of farmhouse style beer. Suitable for producing Saisons and farmhouse style beers up to 14% ABV. Attenuation: Very High Flocculation: Medium Usage Directions: Sprinkle directly on up to 23 L (6 US Gal) of wort. For best results, ferment at 26-32 degrees C (79-90 degrees F). Storage Recommendations: Store in the fridge.

This traditional French Saison strain produces distinctive aromas and flavours, delivering a vibrant mix of spicy, fruity, and peppery notes that define the character of classic Saison ales.

Engineered for high alcohol tolerance—up to 14% ABV—M29 is perfect for a wide range of rustic and strong farmhouse beers. Its very high attenuation results in a dry, crisp finish, while the medium flocculation ensures a balance between clarity and yeast character in the final pour.
