  • Mad Millie Ginger Beer Yeast
  • 1 Standard 5L Demijohn/Carboy with black lid or swing clip
  • Funnel

Ingredients needed:

  • 1 kg Dextrose
  • 200 grams Fresh Root Ginger (Add more for a stronger Ginger flavor)
  • 2 Fresh Lemons (Or 2 Oranges for a different flavor profile)
  • 4.5 Liters of Water
  • Mad Millie Ginger Beer Yeast

Equipment needed:

  • 1 Standard Demijohn/Carboy (5 Liters)
  • 1 Measuring Jug
  • 1 Funnel
  • 1 Siphon
  • 1 Glass Jam Jar or Cup
  • 1 Airlock
  • 2 Pots for Boiling Water
  • 1 Mixing Spoon
  • 1 Kitchen Grater
  • 1 Thermometer
  • 1 Hydrometer
  • Sterilizer or equivalent
  • 6 Reusable flip-top 750 ml bottles

Step-by-Step Instructions:

Prepare ingredients:

  • Lower Alcohol Option (4-5% ABV): 300-400g Dextrose
  • Higher Alcohol Option (7-8% ABV): 800-1,000g Dextrose
  • 200 grams Fresh Root Ginger (Add more for a stronger ginger flavor)
  • 2 Fresh Lemons (Or substitute 2 oranges for a different flavor profile)
  • 4.5 Liters of Water
  • 1 Packet Mad Millie Ginger Beer Yeast

Step 1: Prep Work

  1. Clean and sterilize all equipment thoroughly. Use warm soapy water to remove surface dirt, then sterilize with Morgans Sanitize Steriliser or equivalent (Sodium Percarbonate 250 g). Ensure all surfaces are clean and sanitized.

Step 2: Creating the Base Liquid

  1. Boil 1 liter of water in one pot and the remaining water in another.
  2. Wash and scrub the ginger root, then grate it into a bowl.
  3. Juice the lemons.
  4. Once the water in the pot is boiling, dissolve dextrose in the 1-liter pot. Add grated ginger and let it simmer for 10-15 minutes. Then add lemon juice.
  5. Turn off the heat and let both pots of water cool with lids on.

Step 3: Activating the Yeast

  1. While the water is cooling, activate the Mad Millie Ginger Beer Yeast. Pour a small amount of boiling water into a clean jar, allowing it to cool to around 20°C.
  2. Stir in a teaspoon of sugar, then add the yeast. Cover loosely with foil or kitchen paper towel and set aside.

Step 4: Mixing It Up

  1. Once the water has cooled to a reasonable temperature, mix everything together. Do not filter out the fruit.
  2. Take a hydrometer reading to measure the original gravity before adding the yeast.
  3. Use a funnel to transfer the mixture into the demijohn, leaving 5 inches of clearance from the top.
  4. Add the activated yeast to the demijohn and attach the airlock.

Step 5: Brewing

  1. Place the demijohn in a room around 20°C.
  2. Fermentation will be rapid in the first 24 hours, indicated by bubbling in the airlock. Fermentation will slow over a few days.
  3. Leave the brew to ferment for around 4 weeks until there is no airlock activity.
  4. Siphon the liquid through a filtering mesh into a clean jug to remove ginger and most yeast. Then bottle the ginger beer, leaving 1-2 inches of space at the top to allow for expansion.
  5. Bottle conditioned for 1-2 weeks for optimal taste and fizziness.

Non-Alcoholic Ginger Beer:

  1. Target Alcohol Content:
    For non-alcoholic ginger beer, the alcohol content must stay below 0.5% ABV. The yeast is added primarily for carbonation rather than alcohol production. 50g of dextrose provides just enough fermentable sugar for the yeast to create CO2 for carbonation.
