 This recipe is an Aussie Brewmakers ‘take’ on the James Squires 150 Lashes. This pale ale has a malted wheat base with fruity hop overtones. It is a top session pale ale that is sure to appeal if you are a fan of the James Squire commercial offering. This recipe is another great introduction to experimenting with hops, wet malts and steeping grains for the beginner or ‘tin kit’ brewer.
Supplied Kit Ingredients:
- 1 x 1.7kg Coopers Series Bootmaker Pale Ale
- 1 x 1.5kg Coopers Wheat Malt Extract
- 1 x 250g Light Dried Malt Extract (LDME)
- 1 x 150g Cracked Crystal Grain (steeped)
- 1 x 15g Nelson Sauvin Finishing Hops (steeped)
- 1 x 15g Amarillo Finishing Hops (steeped)
- 1 x 12g Galaxy Finishing Hops (dry hopped)
- 1 x 11.5g Safale US-05 American Ale Yeast
Other Ingredients:
- 200g of Dextrose if kegging with no secondary fermentation (not supplied)
Method:
- Clean / sterilize all equipment including fermenter, paddle, mug and jug (used for steeping)
- Discard Coopers Beer Kit tin yeast and sit beer tin along with the malt tin in hot water for 10 minutes
- Boil 1.25L of water in kettle
- Steep 150g Cracked Crystal Grain in 1L water for 20 minutes
- Steep 15g of Nelson Sauvin and 15g of Amarillo Finishing Hops in 250ml of boiled water for 10 minutes
- Boil 2L of water in kettle
- Add 1.5L of boiled water to fermenter
- Add Coopers Wheat Malt Extract tin along with 250g LDME (add slowly to avoid clumping) to fermenter and stir to thoroughly dissolve
- Pour 250ml of boiled water into Coopers Wheat Malt Extract tin and stir to dissolve remaining contents, then add to fermenter
- Add Coopers Series Bootmaker Pale Ale tin to fermenter and stir thoroughly to dissolve
- Pour 250ml of boiled water into Coopers Series Bootmaker Pale Ale tin and stir to dissolve remaining contents, then add to fermenter
- Strain 150g of steeped Crystal Grain into fermenter (do not add grain to fermenter) and rinse with water
- Add cold water to fermenter to 22.5 ltrs and test temperature – make sure it is between 18-24 degrees before pitching yeast
- Take initial hydrometer reading
- Add Nelson Sauvin and Amarillo Finishing Hops bag and steeped water to fermenter
- Pitch 11.5g Safale US-05 American Ale Yeast and stir gently
- On day 2 or 3 of ferment add Galaxy Finishing Hops teabag to fermenter and gently stir in with sterilized paddle (dry hop)
- When fermentation is finished check with hydrometer and bottle as per normal.
